Crema di Limoncello
  • 11 Meyer Lemons, or you can use 8 lemons and 2 oranges
  • 1 750 ml bottle + 1 ½ cups of Everclear (Vodka may be substituted)
  • 9 cups whole milk
  • 5 pounds sugar (10 cups)
  • A few gratings of nutmeg
  • 2 Tablespoons of Jameson (or equivalent whiskey)
  • 2 teaspoons vanilla extract
  1. Peels the lemons (and oranges if using), being careful not to include any white pith. Place peels in a bowl and cover with the Everclear (or Vodka). Soak for one week in a jar with a lid (you will need a big one or can use a 5 gallon pot with a lid). Place this in a dark cool spot if possible.
  2. After a week, strain the peels & discard, keeping the flavored alcohol. Pour the milk, sugar, Jameson, nutmeg and vanilla into a large heavy bottomed saucepan. Heat gently, stirring to dissolve the sugar. Simmer gently for 5 minutes. Add the alcohol and bring back to a simmer. Remove from heat and let cool completely.
  3. Pour into bottles and serve as a digestif. Keep refrigerated or frozen at all times.
