Once again I am facing the Tuesdays with Dorie (TWD) deadline. I had hoped to bake yesterday but the day got away from me. Since the post is due today I’m not late, am I? Given this logic, I came home from class and baked Madeleines.
Now the first thing you need for Madeleines are the molds. Thankfully, I ordered this two weeks ago when I checked the TWD site for our assignments.
The recipe seemed easy enough at first glance. I didn’t have the sifter so I placed my flour, salt & tablespoon of sugar in the bowl of my kitchenaid mixer and gave it a spin with the whisk attachment (I know, I need a sifter, but one can hope this step helped).
Now for the eggs. My Sister-in-Law gave me the cutest thing for my birthday last summer. He is adorable, isn’t he? This is an egg separator – the egg cracked into the opening and pour the white out of his mouth.
I made the recipe as directed (In accordance with the TWD rules only the host for this assignment can give out the recipe so please visit Counter Dog for the recipe and directions. The batter went into a plastic bag, I snipped off the corner and then piped the batter into the molds.
The Madeleines came out very well, considering I had never made them before. I did learn to leave some room for the Madeleines to puff up so don’t fill the mold to the brim, let them cool a bit more so they don’t stick and enjoy them with a cup of tea or coffee while they are still warm. I had a cup of coffee – is that sacrilege?
These are such lovely little cookies – even if they did puff up a bit and stick to the mold a bit.
I play tennis tonight so I made little gift bags for the girls.
