A Special Easter Celebration

I absolutely love Easter – when it’s time for pastels, chocolate bunnies, egg hunts and fingers crossed, warm weather! Everyone gathers in my kitchen in their finest Easter clothes, while they help me prepare a lovely celebration — an easy and casual Easter brunch that’s sure to impress even the pickiest of guests.

Everyone has their own Easter traditions, myself included. And while this is the same Easter brunch menu I prepared before my husband Steve came into my life, I still switch things up each year to make room for our new, shared family traditions.

Of course, I keep some of my traditional dishes in the mix, but I love adding new twists and new dishes each year. We’re always welcoming new friends to our family and by incorporating their recipes into my menu, I can make sure there’s always room for everyone’s tastes at the table.

Easter Brunch Menu:

The great thing about this menu is that you can make the stew the day before and simply reheat it as guests begin to arrive. ‘It’s casually elegant, non fussy and simply delicious.

Speaking of guests, make sure you have a pitcher of strawberry mimosas ready so everyone can have a festive sip right off the bat. That gives you time to grill or steam the asparagus and poach the eggs. The recipe is easy and quick, but remarkably tasty — giving you plenty of time to enjoy your Easter guests.
